Add drained and rinsed chickpeas to a small bowl. Add baking soda and stir to combine. Add to a skillet over medium heat and heat for 2-3 minutes, or until chickpeas are warm.

Remove from skillet into a bowl of cold water and rub chickpeas thoroughly to remove skins. You may need to change the water a few times until you have removed most of the skins, which you can discard.

Add skinned chickpeas to a food processer. Add tahini, garlic, salt, and white pepper. Pulse a few times to begin blending.

Add 1/4 cup lemon juice and continue blending until smooth, 2-3 minutes. Taste and add more lemon juice depending on your preference.

Slowly add cold water as you continue blending. Stop periodically and check consistency. If you like a thicker hummus, add less water. If you like it thinner and smoother, continue adding water until you reach desired consistency.

Add to serving bowl and add a small amount of olive oil and paprika to taste (optional). Enjoy with pita chips/bread and vegetables.
