I don’t know about you, but I am ALL ABOUT hummus these days. And just in time for the hot summer days ahead, where all you want is something easy, fresh, and light. Side question: where was this creamy, healthy snack when I was a kid? Why wasn’t hummus a “thing”?! Maybe I would have consumed less Dunkaroos and Lunchables. 🙂
One of my favorite places to get hummus from is Zoe’s Kitchen (along with my usual cauliflower rice bowl with salmon)! It is fresh, creamy, light, and oh-so-smooth. Paired with some warm pita bread or fresh cucumbers… I could snack on it all. day. long.
I love it so much that I recipe-tested my way into creating a copycat version of Zoe’s Classic Hummus! After a bit of trial and error and some tweaking here and there, I’m SO excited to share this delicious, fresh, and healthy recipe! Bonus: hummus is full of fiber and protein and low in carbs. It’s bikini season, people!!
A little side note before you get started. Yes, you need to remove the skins on the chickpeas. It’s not optional. This is the reason the texture is super smooth like Zoe’s. Lucky for you, I’ve gone ahead and done all the research and testing and found an EASY way to remove them. This technique is originally in Yotam Ottolenghi’s cookbook Jerusalem, and is simplified by America’s Test Kitchen. I explain it in the recipe, but basically, you mix baking soda with the chickpeas, heat them for a few minutes, then rinse and rub the skins off in cold water. Pretty darn simple and TOTALLY worth it!

Classic Hummus (Zoe’s Copycat)
This Classic Hummus is fresh, creamy, super smooth and tastes just like Zoe’s Kitchen hummus! The perfect light and healthy summer snack and so easy to make!
Ingredients
- 2 cans of garbanzo beans chickpeas, drained and rinsed
- 3 teaspoons baking soda
- 1/3 cup tahini
- 1.5 teaspoons minced garlic or 3 cloves fresh garlic
- 1/8 teaspoon salt
- 1/8 teaspoon ground white pepper
- 1/4 to 1/2 cup lemon juice depending on preference
- 1/4 to 1/2 cup ice cold water
- Olive oil
- Paprika
Instructions

Add drained and rinsed chickpeas to a small bowl. Add baking soda and stir to combine. Add to a skillet over medium heat and heat for 2-3 minutes, or until chickpeas are warm.

Remove from skillet into a bowl of cold water and rub chickpeas thoroughly to remove skins. You may need to change the water a few times until you have removed most of the skins, which you can discard.

Add skinned chickpeas to a food processer. Add tahini, garlic, salt, and white pepper. Pulse a few times to begin blending.

Add 1/4 cup lemon juice and continue blending until smooth, 2-3 minutes. Taste and add more lemon juice depending on your preference.

Slowly add cold water as you continue blending. Stop periodically and check consistency. If you like a thicker hummus, add less water. If you like it thinner and smoother, continue adding water until you reach desired consistency.

Add to serving bowl and add a small amount of olive oil and paprika to taste (optional). Enjoy with pita chips/bread and vegetables.

Store in an airtight container in the fridge for up to one week.
