Y’ALL!!! Where did summer go?!
I don’t know about you, but I have a tendency to resist change (even if it’s good!), and this time in August is always bittersweet to me. I’ve loved all of our summer vacations and stay-cations, soaking up the sun, and the more relaxed hours and vibe at work. I’m not quite ready for summer to end, but in that same breath, I absolutely LOVE fall and I’m so excited for cooler weather and a wardrobe change, football season (hook ‘ horns!), and having more of a routine/structure.
In my opinion, fall is the perfect opportunity to reset and refocus! While the summer months gave me time to get creative and dream big with A Slice of Sweet, now it’s time to put pen to paper. Stay tuned!

I used my Mexican Chocolate Brownies recipe for the base, and with a few tweaks, created this epic dessert. These skillet brownies have a rich, fudgey interior with peanut butter chips scattered throughout. They are topped off with a peanut butter drizzle and vanilla ice cream… Heaven. On. Earth!!
Y’all know I love a fancy three-layer cake, but I can also appreciate an easy, rustic dessert. And these skillet brownies are definitely easy. You don’t even need to worry about room temperature ingredients in this one! 🙂
These brownies would be perfect for a family game or movie night-in! And completely acceptable to eat straight out of the skillet.

Chocolate Peanut Butter Skillet Brownies
These Chocolate Peanut Butter Skillet Brownies have a rich, fudgey interior with peanut butter chips scattered throughout and are topped off with a peanut butter drizzle and vanilla ice cream!
Ingredients
For the Brownies:
- 1/2 cup (1 stick) unsalted butter
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1 1/2 cup peanut butter baking chips
For the Peanut Butter Drizzle:
- 1/4 cup powdered sugar
- 1 tablespoon milk
- 1 tablespoon peanut butter
Vanilla Ice Cream (optional topping)
Instructions

Arrange your oven rack to the lower third position of the oven and preheat the oven to 350 degrees. Lightly grease a 12 or 14-inch oven-safe skillet with softened butter.

In a large bowl, whisk to combine the cocoa, flour, salt, and baking powder. Set aside.

Melt the 2 sticks of butter in a nonstick saucepan over medium-low heat (be sure not to boil). Remove from heat and let cool slightly.

Add the sugar and mix well with a large spoon.

Whisk each egg in a bowl and add to the saucepan one at a time, mixing well after each addition.

Add the vanilla and stir to combine.

Add the cocoa powder and flour mixture and mix until smooth.

Add the peanut butter chips and stir to combine.

Spread the batter in the skillet and bake until a toothpick inserted in the middle comes out fudgy, about 35 to 40 minutes. Remove from oven and let the brownies cool in the skillet for 15 minutes.

Meanwhile, to make the peanut butter drizzle, combine the powdered sugar, milk, and peanut butter in a small bowl and stir until well combined (add additional milk if you want a thinner consistency.

Using a spoon, drizzle the peanut butter mixture over the brownies. You can also use a small Ziploc or pastry bag and cut off the end to drizzle.

Top with vanilla ice cream, if desired, and enjoy!
