Corn Dip.
It’s my go-to.
It’s that one recipe I’ve taken to so many parties and potlucks that I know it by heart. (Sorry if you are tired of it high school besties, work colleagues, and GC girls.)
It’s the one recipe that everyone wants after they’ve tried it… a true crowd-pleaser! (Cue Will Smith… I got the fever… for the flavor of a… crowd pleaser).
And, despite it’s lack of flour, sugar, and eggs, I feel completely compelled to share it with you here!
With the Super Bowl coming up (wah, Cowboys!), this is a dip you NEED to serve or take to a watching party. It’s an appetizer you’ll want to have in your back pocket for when that Google Doc sign-up sheet comes around at Christmas. Or you may just need it to treat yourself on a random Friday night. No judgment.
Once you get past the name (don’t knock it till you try it), I know it will become a “go-to” for you too!
This dip is creamy and cheesy, with a slight kick from the jalapeño and a touch of sweetness from the shoe peg corn. Paired with Fritos (you definitely want the Scoops)… Heaven. On. Earth. I dare you to take just one bite! 🙂
And it keeps getting better… it is SO EASY to make. A little chopping, but mostly just throwing everything in one bowl, stirring together, and popping it in the fridge. Easy peasy.
Two notes- you need to use SHOE PEG CORN. I’ve used regular ole yellow corn and it just doesn’t do the trick. Also, SHARP cheddar cheese. Not mild, not finely shredded. Trust me here… I’m saving you the heartache.

Corn Dip
This CORN DIP will become your go-to appetizer recipe! This easy crowd-pleaser is cheesy and ultra creamy, with a slight kick from the jalapeño and a touch of sweetness from the shoe peg corn.
Ingredients
- 2 cans shoe peg corn drained
- 2 cups shredded sharp cheddar cheese
- 2 jalapeños finely diced
- 1/2 purple onion diced
- 8 ounces sour cream
- 2 tablespoons mayonnaise
- Salt & Pepper to taste
- Scoop Fritos
Instructions

Drain the shoe peg corn and add to a large bowl.

Add cheese, diced jalapeño, & diced onion, and stir to combine.

Add sour cream and mayonnaise and stir to combine.

Add fresh ground pepper and salt to taste, and place in fridge to chill.

Serve with Scoop Fritos.
